This pasta made with fresh vegetables is unique because it contains a special cream cheese sauce.
• 350 g penne pasta
• 140 g broccoli
• 100 g green peas
• 2 pieces zucchini
• 1 tablespoon olive oil
• 100 g light cream cheese
• 50 g grated parmesan
• 1 lemon – juice and grated peel
• 1 handful basil
While the pasta is cooking, cut the broccoli into small pieces. Clean the green peas and put them in the water we cook the pasta in for the last 3 minutes. Slice the zucchini and cook it in oil for 7-8 minutes, until it becomes golden brown.
When the pasta and the vegetables are almost cooked, take a spoonful of the boiling water and pour it under the zucchini, then add the cream cheese, parmesan, lemon juice and peel, and stir until the mixture becomes creamy and smooth.
Add the basil and spice the sauce as desired. Strain the pasta and the vegetables, and stir them into the sauce.
