Potato scones, one of the greatest savory snacks, come in a variety of flavors, with a favorite recipe for everyone. A good scone recipe takes time and patience to make. However, if you are pressed for time, you can still make a delicious scone by simplifying the recipe.

In a simplified potato scone recipe, the butter and goose fat make the dough crumbly and tasty, but it won’t ruin the texture if you make it with only one of the two ingredients. You can start working immediately with the dough once it’s mixed together, but you can also rest it in the fridge overnight. It’s worth making a double batch as it probably will disappear quickly.

Tips to make potato scones even tastier

To make the scones even more interesting, you can add herbs, such as chives or spring onions to the dough. Also, you can sprinkle the scones with sesame seeds, cumin seeds or grated cheese.

Ingredients for 4 servings

  • 500 g potatoes
  • 200 g butter
  • 2 egg yolks
  • 700 g fine flour
  • 1 egg for the top
  • 200 g goose fat
  • 10 g powdered yeast
  • 1 tsp salt

Preparation

Cut the potatoes into medium cubes and cook in plenty of salted water until soft, then drain.

When the potatoes have cooled, mash them with a potato masher, add the butter, fat and salt, and blend until smooth.

Add the egg yolks and yeast to the smooth potatoes.

Mix the sifted flour with the salt (1 teaspoon), add to the potato mixture and knead into dough.

The dough can be shaped immediately, but you can also wrap it in cling foil and refrigerate overnight.

Roll out the dough on a lightly floured surface to a thickness of about 2 cm.

Use a knife to make lines on the top of the dough and then cut with a pastry cutter.

Place the scones on a baking tray lined with baking paper, brush the tops with beaten egg and bake in a preheated oven at 180°C for 15-20 minutes until they turn a nice golden brown.
