- 500 g pumpkin
- 600 g sugar
- 2 oranges
- 1 packet pectin
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon star anise
Cut the pumpkin into small pieces, and roast at 180 degrees for about 45 minutes. When the flesh is soft, remove the skin and crush with a fork or mash with a stick blender.

Place in a saucepan, add the sugar, freshly squeezed orange juice, spices and pectin. Bring to the boil and simmer for three to five minutes from the time it starts boiling. If the jam turns out too thick, add a little water. Transfer to sterilized jars, close tightly and turn upside down for five minutes.
