Ingredients

  • 450 g plain biscuits
  • 200 g walnuts
  • 75 g cocoa or coconut butter
  • 200 g dark chocolate
  • 200 ml water
  • 100 g sugar
  • A pinch of salt
  • 2 teaspoons rum essence
  • Coconut flakes for decoration
  • Raisins, optional

Preparation

Start by gathering all the ingredients on the work table, then prepare the dishes and work utensils to have them close at hand.

You need a saucepan in which to prepare the syrup, a bowl in which to mix the ingredients, and a knife and a food processor to chop or crush some of the ingredients. Also, once the dessert is assembled, you will need two pieces of plastic foil to shape the “salami” rolls. When you have all the ingredients and utensils ready, you can start.

Preparation

First put 1/4 of the total amount of biscuits into the food processor and 1/4 of the amount of nuts. Finely chop these ingredients, then transfer them to a large bowl.

Break the remaining biscuits into larger pieces and chop the walnuts with a knife. Add everything to the bowl with the chopped ingredients. Mix them all well.

Place a saucepan on the stove and add the water and sugar. Mix well until the sugar dissolves, then add the broken chocolate.

Stir again until the chocolate is dissolved. Turn off the heat and add the cocoa butter over the hot mixture. Add the rum essence and mix well until the cocoa butter is melted and the composition is homogenized.

Pour the chocolate syrup over the ingredients in the bowl and mix gently so as not to break the biscuit pieces. Set aside the mixture and wait until it cools down, then divide into two equal portions and place the halves onto the two pieces of foil. Shape nicely into salami-shape forms using the two foils, then tightly wrap the foils around the chocolate-walnut-biscuit salami pieces and tie the ends.

Store the biscuit salami rolls in the fridge for 2-3 hours, or until it becomes firm and you can slice it nicely.

If you are in a hurry, you can chill the rolls in the freezer for 30 minutes, then you can slice them up.

You can roll the biscuit salami into powdered sugar, coconut flakes, or cocoa powder.
