Healthy pancakes

Pancakes are an easy to make treat. They are delicious in almost any combination, and with a little attention they can also be healthy and low in calories. Here’s a quick and healthy pancake recipe.

Ingredients (for 4 servings)

• 1/2 ripe banana
• 2 egg whites
• 1 teaspoon vegetarian protein powder
• 1 teaspoon flax seed flour
• 1/4 teaspoon cinnamon
• 1/2 teaspoon vanilla extract
• 2 teaspoons maple syrup
• 1/2 cup berries or sliced bananas
• Coconut oil

Preparation

In a medium sized bowl, puree the banana and mix in the egg whites. Sprinkle in the protein powder, the flax seed flour, the cinnamon and the vanilla extract, and mix well. Pour a drop of coconut oil in a pan and heat it up. Pour about ¼ of the batter into the pan and fry it until it starts bubbling. Flip the pancake and fry it until it turns golden brown. Serve it with maple syrup, berries or bananas.
