Most of us love pizza in general, but, because there are thousands of pizza recipes, it is difficult to find the one that suits our taste the most. Nevertheless, baking pizza at home is very enjoyable; it is much cheaper to make, we can use the kinds and amounts of toppings we want, and we can make the crust thinner or thicker, softer or crunchier. Also, we can make our pizza spicy hot, we can overload it with cheese… in short, we can vary it any way we want.
Let’s tale a look at a genuine Italian recipe for the crust. The ingredients are enough for 4 individual pizzas, 25 cm diameter each.
- 300 ml water
- 3 tablespoons extra virgin olive oil
- 500 g flour
- 25 g yeast
- 1 teaspoon sugar
- 1 teaspoon salt
Mix the sugar, olive oil and yeast in lukewarm water and allow the yeast to activate. Sift the flour into a large bowl and add the salt and the active yeast. Mix everything well together and knead the dough until it doesn’t stick to your hands, but it’s not very hard yet. When done, spread a few drops of olive oil onto the dough, cover it with a piece of cloth and let it rise for at least an hour. When it has grown to twice its original size, place the dough onto a flat surface sprinkled with flour, and knead it some more to remove the trapped air bubbles. Flatten the dough, cut it into four equal parts and let it sit for ¼ hour. Shape the pizza crusts, heap on the toppings you like and bake them in the oven.
