These divine coconut balls can be made from leftover sweetbread as well instead of sponge cake.
Coconut balls are a very popular dessert, delicious, quick, and easy to make; in fact, even a small child can make them. You can try out several versions: you can put cherries in the middle, add chestnuts to the mixture or rum to make it more exciting. There are children-friendly recipes as well, but also some that are not recommended for children, including this vodka version.
Ingredients
- 180 g flour
- 1 teaspoon baking powder
- 3 eggs
- 150 g icing sugar
- 2 tablespoons water
Other ingredients
- 2 tablespoons vodka
- 2 tablespoons jam (cherry or peach)
- 3 tablespoons cocoa powder
- 150 g coconut flakes (for rolling)
Preparation
If you don’t have any leftover sponge cake or sweetbread, bake one. First sift the flour into a mixing bowl and add the baking powder. Beat the eggs with the icing sugar until frothy, then add the flour mixture and the water. Spread the mixture on a baking tray lined with baking paper and bake at180°C for 8-14 minutes.
Crumble the cooled sponge cake into a mixing bowl, add the other ingredients except the coconut flakes and start mixing them together, adding the milk as needed to make a mass that can be shaped easily.
Shape the mixture into balls and then roll them in coconut flakes. Cover and refrigerate to allow the flavors to blend.
