Simple, gluten-free and sugar-free oat biscuits: vegan with plant milk

This simple gluten- and sugar-free vegan oatmeal biscuit recipe can be topped with chocolate or dried fruit.

This vegan, gluten-free and sugar-free oatmeal biscuit recipe is delicious on its own, but you can also add dark chocolate or any dried fruit you like. Oat biscuits are healthy and good for digestion, which makes them a perfect choice for breakfast, snacks or with a cup of coffee.

Vegan oatcake recipe

Ingredients for 15 pieces

  • 150 g birch sugar
  • 100 g butter or margarine
  • 100 g (gluten-free) oatmeal
  • 75 g rice flour
  • 2 tablespoons vegetable milk
  • 1 teaspoon (gluten-free) baking powder
  • 1 teaspoon vanilla flavoring
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • A pinch of salt
  • 1 tablespoon honey or maple syrup (can be omitted)

Preparation

Melt the butter or margarine. Stir the honey or maple syrup into the melted butter.

In a bowl, combine the dry ingredients: birch sugar, oatmeal, rice flour, baking powder, cinnamon, cloves and salt. Add the melted butter, vanilla flavoring and vegetable juice and mix until you obtain a lump-free dough.

Line a baking tray with baking paper. Use a tablespoon to pile heaps of the dough on the paper and slightly flatten them. Do not place the cookies too close together, as they will grow while baking. Bake in a 175 degree oven for about twenty minutes until the biscuits turn golden brown.
