Avocado should gain a prominent place in our diet due to its exceptional richness in nutrients. Despite the fact that it is a fruit, avocado contains nutrients in all main groups: unsaturated fats, proteins, antioxidants, fibers and about 20 different kinds of vitamins.
Spinach cream with yoghurt and avocado – the recipe
- 2 larger or 3 smaller avocados
- 4-5 spinach leaves
- 70 g Greek yoghurt
- 2 green onions
- ¼ cup lemon juice
- ½ teaspoon garlic powder
- A dash of pepper
- Optional: 2 tablespoon grated Parmesan
Wash the green onions and cut into larger pieces. Place the onions into a blender and crush. Add the flesh of the avocadoes, the yoghurt, the Parmesan, the lemon juice, the garlic powder and the pepper. Mix until smooth. Add the spinach leaves at the end.
Chill the spread in the fridge for several hours before serving. You may serve it with slices of bread and crackers, or as a dip for fresh vegetables such as carrots, cucumbers, tomatoes, peppers, celery and so on.
The recipe contains 85% of the necessary daily dose of vitamin A, 180% of vitamin C, and 25% of folic acid. Besides, it has a lot of potassium, proteins, fibers and calcium, but only 90 calories, 6 g fat and no cholesterol.
