Spinach and green lentil salad recipe

If you want a light and yet filling spring salad, you can try this one, made from spinach salad and green lentils.



– 2-3 bunches spinach
– 3 green onions
– 1 cup boiled green lentils
– 2 cloves chopped garlic
– 2-3 tablespoons olive oil
– 2 bunches radishes
– 1 carrot cut in stripes
– several mushrooms, sliced
– lemon juice or balsamic vinegar
– salt to taste
– 1 teaspoon Dijon mustard (optional)


Chop the vegetables and mix them together. The dressing can be prepared either with olive oil and lemon juice/vinegar, or with Dijon mustard, a little vinegar and olive oil.
