Soft and juicy apple-banana muffins, done in half an hour

Both banana and apple muffins are delicious, and muffins that contain both fruits are even more tempting.

Making the muffins is very simple, as all you need to do is mixing the dry and wet ingredients and adding the fruit. Be sure to use ripe bananas so you don’t need as much sugar. After adding the flour, make sure you don’t overmix the batter or the muffins will turn out hard.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 0.5 cups milk
  • 0.5 cups oil
  • 2 apples
  • 1 banana
  • 1 egg
  • 1 packet baking powder
  • 1 teaspoon cinnamon
  • 1 packet vanilla sugar
  • 1 dash salted almond flakes for each muffin

Preparation

Grate the apples using a large hole grater and sprinkle with cinnamon. Mash the banana with a fork. Beat the egg in a bowl, add the two kinds of sugar and mix until frothy. Add the bananas, gradually pour in the milk and oil, then add the flour mixed with baking powder and the salt, in several batches. Finally, gently stir in the grated apples.

Pour the batter into a muffin tin lined with paper liners up to two thirds. You can also sprinkle almond flakes on top. Place in a preheated oven and bake for about 20-25 minutes. Test with a toothpick before removing from the oven: if no paste sticks to it, the muffins are done.
