Pumpkins are one of the most favorite and most nourishing gifts of the fall. These giant fruits can be prepared in countless ways, and somehow they can make our days in the fall more colorful and sweeter. You can experiment to your delight and enjoy various tastes, colors and textures. You can serve dips with fresh crackers, apples, carrots, peppers cucumbers, zucchini, celery stalks and so on.

Ingredients
- 1 pumpkin – about 500–600 g
- 1 teaspoon salt and 1 teaspoon cinnamon
- 1 pinch freshly ground pepper
- 2–3 cloves garlic
- 1 vanilla stick
- 150 g mascarpone
Preparation
Cut the pumpkin into palm-width pieces, place the pieces into a pan lined with baking paper and cover them with aluminum foil.
When the pumpkin slices are fully baked, use a spoon to scrape out the flesh, add the other ingredients except for the mascarpone, and use a hand blender to mix the ingredients well.
Then use a wooden spoon to mix in the mascarpone and distribute the dip into small bowls. Serve the sliced vegetables and crackers in glass bowls or glasses. Enjoy!
