Lettuce soup, a delicious summer specialty

Lettuce is one of the ingredients used in preparing delicious snacks or salads that accompany summer menus. Sometimes, however, lettuce leaves may not be so fresh and you can’t consume them as such. There is no need to throw them away in this case, as you can use them in another way: lettuce soup is a delicious summer specialty.

To prepare this soup, you will need the following ingredients:

– 2 tablespoons olive oil
– 1 cube butter
– 1 chopped onion
– 1 green lettuce with leaves torn into smaller pieces
– 2 cubed potatoes
– 600 ml chicken broth
– 30 ml white wine
– 60 g cream
– basil
– salt and pepper to taste
– chopped dill

Pour some olive oil into a pot, and heat it up. Add the butter and the chopped onions. Cook the onions until they turn golden and slightly glassy. Add the lettuce, stir over low heat for two minutes, and then add the chopped potatoes too. When the potatoes are slightly browned, add the chicken broth and the white wine, the cream, the basil, the salt and the pepper, and let the soup boil for about an hour, mixing it occasionally. When the soup is ready, serve it with a handful of croutons flavored with basil and olive oil.
