Cheesecake is one of the most delicious no-bake desserts, and everyone can make it according to his or her taste. This recipe is a lemon version, but it is also delicious with strawberries, coconut, sour cherries, blueberries and so on.
Ingredients for 6 servings
The base
- 300 g plain biscuits
- 50 g butter
- 50 ml milk
The cream
- 400 g cream cheese (unsweetened)
- 400 ml whipped cream
- 4 tablespoons cane sugar
- 2 lemons (or lime)
- 20 g gelatin
- 100 ml milk
Preparation
The base
Grind or crush the biscuits. Melt the butter and add to the biscuits along with the milk. You may also add melted chocolate spread (in this case some more biscuits will be required), cocoa powder or some sugar.
Mix all ingredients well and smooth the mixture into a cake mold. It is useful to place baking paper at the bottom of the mold, so you can remove the cake easily.
The cream
In a bowl, mix the cream cheese with sugar and the juice of the lemons. Add the whipped cream and stir until smooth.
Mix the gelatin powder with lukewarm milk, add to the cream and mix well. Spread on the biscuit base.
Place the cake in the refrigerator for 2-3 hours. You can decorate it with grated lemon peel or melissa leaves.
