Grandma’s vegetable seasoning mix

This recipe is useful because it can replace seasoning salt, and it doesn’t contain any preservatives.

1 kg carrots
1 kg turnips
1 kg red bell peppers
1 kg tomatoes
1 kg onions
2-3 heads garlic
4 larger celeriac roots
500 g kohlrabi
500 g cauliflowers
500 g Brussels sprouts
Lots of parsley leaves
Celery leaves

1 kg salt


Peel the ingredients except for the vegetables. Grind them in a meat grinder or crush them in smaller doses in a blender. In a large bowl, mix the crushed vegetables with 1 kg salt. Allow the mixture to sit for 24 hours; stir it occasionally. Distribute the mixture into jars.
