Clean eating is about providing your body with the best food and deligthing your soul at the same time. It is about finding real pleasure in eating. And this doesn’t mean either stuffing your stomach to the full and becoming bloated and uncomfortable, neither depriving yourself of food you like. Food is fuel to a healthy and fit body and source to a happier soul.
The next recipe was created based upon the principles above. Instead of eating a usual chicken roast dinner, you can enjoy a refreshing, spicy, lime flavored creation.
Ingredients
- 2 chicken breast fillets
- The juice of 2 limes
- The juice of half an orange
- 1 small bunch cilantro
- 1 small red onion
- 1 tablespoon raw honey
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 teaspoon Himalayan salt
- A dash of ground black pepper
Preparation
Squeeze out the juice of two limes and half an orange and pour the juice in a blender. Chop the onions, the cilantro and the garlic and add them to the juices along with the rest of the ingredients, except, of course the chicken. Blend the ingredients at low speed to make a marinade.
Cut the chicken breast fillets into four pieces each and dip them into the marinade. Leave the marinated chicken in the refrigerator for two hours.
Fry the chicken pieces in hot oil for about four minutes on each side.
Lime chicken can be used in salads or served with basmati rice.
