The uniqueness of this tasty bread is that its ingredients contain a lot of proteins.
The amount of the ingredients below is enough to make 2 small baguettes or a bigger loaf of bread.
Ingredients
- ¼ cup warm water
- 2 tablespoons olive oil
- 1 cup fat free or low fat cottage cheese
- 1 teaspoons finely cut fresh or dry lavender flowers
- 1 tablespoons finely cut fresh thyme leaves
- ½ tablespoon finely cut fresh basil leaves
- 2 eggs at room temperature
- ¼ baking powder
- 3 cup and 3 tablespoons bread flour
- 3 teaspoons dry yeast
- corn flour
Place all ingredients in the cauldron of the bread baking machine except for the corn flour. Choose the kneading function and turn on the machine.
An advice: Make sure that the bread dough is of the right consistency – don’t be afraid to open the lid of the machine. If the dough seems too soft, add some flour, one tablespoon at a time; if the dough is dry and lumpy, add some water. When the dough is ready, place it on an oiled surface, cover it and let it sit for 10 minutes. Then turn the dough upside down and flatten it. Divide it in two parts and shape them into baguettes or traditional round bread loaves. Place the rolls on a baking pan sprinkled with corn meal and keep the pan in a warm place for 30-50 minutes, or until the dough grows to twice of its initial size.
Raising the dough in the oven – If you are in a hurry, you may raise the dough in the oven. Preheat the oven for about 1 minute, which is enough for the dough to rise faster. If the hear inside the oven is uncomfortable for our hand, the heat is also too high for the dough. In this case, leave the door of the oven open for a while.
Raising the dough in a cold place or in the fridge – If you don’t have enough time to wait for the dough to rise, you can leave it in a cold place. For example, it will rise in about 8-12 hours in the fridge. However, it is best if you have raised the dough for a short while and shaped it into its final form before placing it in the fridge. The bread will be tastier if it’s allowed rise slowly.
Preheat the oven to 200 °C. When the dough is ready, cut three 1 cm deep slits into each roll. Bake them for about 20 minutes or until thy turn golden brown. You may test the bread with a kitchen thermometer – the inside temperature should be between 90 and 100 °C when ready. Place the rolls onto a rack to cool down.
