Preparing this Coleslaw salad is so easy that you may opt for it whenever you need a fast, healthy and tasty snack.
You may use white or red cabbage or a mixture of the two. If you don’t have cabbage, you may replace it with celeriac.
The yogurt dressing is the diet version of the recipe containing mayonnaise. You may also add sour cream or creamy yogurt.
- 500 g cabbage
- 150 g carrots
- 1 tablespoon chopped dill
- 70 g yogurt
- 70 g sour cream
- 2 teaspoons mustard
- 1 tablespoon vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
Prepare the yogurt sauce first. In a medium-size bowl mix the yogurt with the sour cream and mustard and then add the vinegar, the sugar and half a teaspoon of salt. Mix again.
Chop the cabbage or grate it. Clean the carrots and grate them too.
Mix the two vegetables in a large bowl with half a teaspoon of salt. Mix with your hands until the vegetables become a bit soaked. After that, add the yogurt sauce and mix it lightly. You may add the chopped dill now or you may you sprinkle it over the salad at serving. Cover the bowl with a plastic foil or a lid and refrigerate the salad for 2–3 hours. You may serve the salad by itself or as a side dish.
