I recently found the best recipe in the world for baked potatoes.
Choose some regular sized potatoes, rub them with oil, sprinkle a little salt on them and bake them in a preheated oven for one hour. After they are baked, cut them in half and, with a teaspoon, scoop out the flesh of the potatoes (be careful not to break the skins, you will need them).
In a bowl, mix the potato flesh with a little butter, chopped green onions, salt, pepper, cheese (cheddar or mozzarella), cream and an egg yolk.
Fill the potato skins with the mixture and top them with a little melted butter and some cayenne pepper (or paprika), then put them back into the oven for 20 minutes.
