A delicious recipe for the summer heat: no-bake wild berry cake

During the summer heat we don’t really feel like cooking and baking, and we prefer to live on mostly ice-cold food, fruits, light salads and lots of water.

As much as possible, you should stop cooking, so to avoid raising the temperature in your home. There are delicious desserts, for example, that you can make without cooking, such as this cake prepared with seasonal berries.


  • 5 cups raspberries
  • 3/4 cup powdered sugar
  • 1/4 cup fresh orange juice
  • 100 g mascarpone cheese
  • 1 and 1/4 cups of cold cream
  • 1/2 teaspoon vanilla extract
  • salt
  • 20-24 pc. crushed lady fingers
  • 2 and 1/2 cups of blueberries.


Take a cake pan and line the bottom and the sides with baking paper. Sprinkle a tablespoon of powdered sugar onto the raspberries and mix them with the orange juice. In another bowl, mix the remaining mascarpone with icing sugar, add the cream, vanilla and a pinch of salt. Whisk well.

Layer the crushed ladyfingers onto the bottom of the cake pan, add a layer of raspberries and half of the mascarpone cream. Add another layer of ladyfingers and another layer of raspberries, and then the other half of the mascarpone.

Finally, sprinkle the cake with blueberries and place it in the fridge for a while. Then remove the cake from the pan and enjoy the heavenly flavors.
