- Eggs
- Boiled potatoes
- Onions
Preparation
Cut the boiled potatoes and the onion into small cubes and place them into a tall frying pan with a small amount of oil added. Fry stirring constantly until golden brown.
Season with salt and pepper, and then add five or six whisked eggs. Cover the potatoes with the eggs and fry them. Add the grated cheese at the end. When the cheese melts, you can remove the frittata from the pan and cut it into wedges.
You can serve the frittata decorated with chopped parsley or peppers.
