Meringue islands floating on the top of vanilla and sugar flavored milk is a great favorite in Eastern Europe. The following is a simple recipe, which makes about 2-3 servings.
Ingredients
- 750 ml milk
- 75 g sugar
- 2 eggs
- 1 package vanilla sugar
- dash of salt
- a little sugar in the meringue
Preparation
Put 600 ml milk to boil. Whisk the egg whites with a little sugar and a dash of salt. When the milk is boiled up, scoop out small pieces from the meringue and place them carefully on top of the milk. Turn them upside down after a minute of cooking, and remove them onto a plate after another minute.
Mix the egg yolks with the sugar, the vanilla sugar and the leftover milk and stir the mixture quickly into the boiled milk. Cook the milk for a few minutes and then remove the pot from the heat. Cool it down and then refrigerate it. Serve it with the meringue on the top.
+Tip: if you think this method of cooking the meringue is too complicated, you can cook them in the microwave as well. Also, you can mix the egg yolk, milk and sugar cream into the boiled milk first and then add the meringue.
+Tip 2: if you would like the milk to be denser, you can use a couple spoons of flour, more egg yolk or vanilla pudding. The yolks and the pudding will add a nice yellow color as well.
+Tip 3: you may add raisins, grated lemon peels or cinnamon for flavoring.
