Zucchini penne recipe

This tasty zucchini pasta dish can be eaten cold or hot. If you need to cook something fast and delicious, you may choose this zucchini penne recipe.

  • Ingredients

• 450 g zucchini
• 4 tablespoons olive oil
• Salt, pepper
• 0,75 dl yoghurt
• 1 teaspoon corn or rice flour
• 220 g penne
• 2 tablespoons chopped basil

  • Preparation

Cook zucchini in 4 tablespoons oil until slightly brown. Place zucchini in a mixer with the spices, the yoghurt and the flour and puree them together. Pour the puree in a pan and cook it on low heat stirring from time to time until it turns thick.

Boil the penne in salty water with a little oil added. Strain it well when cooked. Add the basil to the sauce and pour the sauce over the penne.
