Raw apricot cake recipe

Eating apricots may eliminate health problems such as anemia, hypocalcaemia, heart kidney and liver diseases and digestive tract problems. Also, substances in apricots fight intestinal worms, acne and water retention, stabilize the level of calcium in bones and cure insomnia. Apricot kernels contain amygdaline, a substance extremely important in treating incipient cancers.

Ingredients

For the cake base:

  • 300 oat flakes
  • 150 g figs
  • 100 g dates
  • 2 tablespoons carob powder
  • 100 ml water
  • A dash of salt

For the cream:

  • 1 cup caju soaked for 4 hours in spring water
  • 700 g apricots
  • 50 g coconut oil melted in a dish immersed in hot water
  • 3 tablespoons psyllium bran
  • ½ teaspoon vanilla powder

For the topping:

  • 500 g apricots

Preparation

Pour the oat flakes into an S-knife blender and crush them until they turn into flour. Add the rest of the ingredients and mix until you obtain sticky dough. Place the dough into a cake mould, press it gently down and place the mold into the fridge while you are preparing the cream.

Place the caju nuts into the blender and crush them. Add the apricots with the pits removed along with the vanilla and coconut oil and mix well. At the end, add the psyllium bran as well. Cut the cake into thin slices and decorate it as you wish.
