Raffaello cookies are probably one of the most delicious cookies available, but they are rather expensive. However, there are a few promising recipes that allow you to enjoy a similar taste at a lower cost.

1. Raffaello recipe with condensed milk

 Ingredients 

  • 260 ml sweetened condensed milk
  • 75 g powdered milk
  • 30 g unsalted butter at room temperature
  • peeled almonds
  • 220g coconut flakes for the inside + 130g for the outside

Preparation 

– Mix the condensed milk, the powdered milk and the butter to obtain a homogeneous paste.
– Add 220g of coconut flakes and keep mixing.
– Place the mixture into the fridge for 30 minutes so it becomes firm enough for shaping. If the mixture is too sticky, add some more coconut flakes.
– Shape balls from the mixture pressing an almond into the middle of each one, and roll the balls into coconut flakes. Store the cookies in the fridge.

2. Raffaello recipe with waffles

Ingredients

  • 1 cup powdered sugar
  • 1 package butter at room temperature
  • 2 cups powdered milk (200g)
  • 1 1/2 cups coconut flakes (150g)
  • 2 cups of crumbled waffles (about 120g)
  • roasted almonds
  • 5-6 tablespoons of flaked coconuts for the exterior
  • almond extract (optional)

Preparation

– Mix powdered sugar with butter and then add the powdered milk, the coconut flakes, the waffles and the almond extract.
– When the mixture becomes homogeneous, store it in the fridge between 30 minutes and an hour, or until it becomes firm enough for shaping.
– Shape balls from the mixture pressing an almond into the middle of each one, and roll the balls into coconut flakes. Store the cookies in the fridge.
