If you would like to stun your dinner guests with an exotic and special course, try out this nettle and chick pea soup.
• 5 cloves garlic
• 1 onion
• Olive oil
• 2 tablespoons flour
• 3 cans of chick peas
• 1 bowl of fresh nettle leaves
• 1 teaspoon Roman cumin
Peel the onion and chop it up; peel the garlic clover too and crush them. Sauté the onions in a small amount of oil; add the garlic, flour, the juice of the lemon and some grated lemon peel; finally, add the chick peas. Flavor with cumin, salt and pepper to taste, and then fill up the pot with water. Wash nettle leaves, place them in the pot and boil up the soup. When the ingredients are cooked, use a blender or mixer to obtain a smooth cream soup.
An extra tip
This soup is delicious if served with sour cream and tabasco sauce. Chives and garlic toast also go very well with it.
