Spring is here and orache is sold everywhere in marketplaces. Besides vegetable soups, orache is a great ingredient in salads as well.
Ingredients
– 2-3 bunches red orache
– a handful of spinach
– 1 bunch of radishes
– ½ head of lettuce
– 3-4 green onions
– 3-4 tablespoons olive oil
– the juice of 1 lemon, 2 tablespoons apple cider vinegar or some pomegranate juice;
– salt to taste
Preparation
Simply chop and mix together all the vegetables. To make the salad more filling, you can add some avocado slices or a cup of quinoa.
