Fish salad with tomatoes and mozzarella

This salad has 300 calories per serving, and it is very healthy and nutritious. You can prepare it in the evening and have it for lunch the next day at work, or you can have it as an easily digestible and healthy dinner.

Ingredients

• 500 g red or yellow cherry tomatoes
• 450 g fusilli
• 200 g mozzarella, shredded or cubed
• 2 tablespoons white wine vinegar
• ½ teaspoon pepper
• 2 teaspoons dried oregano
• 3 cloves garlic, sliced
• 1 tablespoon salt
• ¼ cup olive oil
• fresh basil

Preparation

Preheat the oven to 220 degrees Celsius. Cut the tomatoes into halves and place them onto a baking pan lined with a baking sheet. Sprinkle them with oregano, sliced garlic, salt and olive oil. Bake the tomatoes for 20-25 minutes.

While the tomatoes are baking, cook the pasta and, in a bowl, mix it with olive oil, vinegar and pepper.

Allow the pasta to cool down and then add the baked tomatoes, the mozzarella and the basil. Mix everything together and enjoy.
