Apple muffin recipe

Ingredients for 12 muffins

  • 100 spelt flour
  • 50 g oat flour
  • 75 g Xylitol
  • 150 g grated apples
  • 2 whole eggs
  • 1/2 teaspoon baking powder
  • a pinch of baking soda
  • a  pinch of salt
  • 1/2 tablespoon ground cinnamon
  • 1-2 tablespoon kefir
  • peanuts (salt free, crushed)

Preparation

I mixed all ingredients together except for the peanuts. I filled the paper-lined muffin cups to ¾ with the batter. I sprinkled the top of the muffins with peanuts. I pre-heated the oven to 180 degrees Celsius, and baked the muffins until reddish brown, but I also checked with the needle to make sure they were completely baked. I left the muffins in the pan for 5 minutes after taking them out from the oven, and then removed the muffins on a plate.
